If you haven’t tried it yet, instant pot popcorn is amazing! To start before you even think to try this you must have coconut oil. This is because coconut oil can heat up to high temperatures without burning. You can find this in the oil aisle at your local grocery store. The best part is you can customize this with any flavor you want. Want Movie theater butter? Kettle corn? Cheddar? It’s all up to you! I’ve made kettle corn it was so good! I love IP popcorn so much I bought cheddar seasoning. For IP popcorn you will also need a glass lid. You do not have to have the special IP glass lid, I use a clear glass lid from my 10” skillet and it works great.
You will need:
4 Tbsp. liquid or solid coconut oil
1/2 cup popcorn kernels
Butter & seasoning of your desire
Turn your instant pot on to Sauté - high, heat oil in the IP liner until the pot reads “hot”, or about 3-5 minutes. Once the oil is hot add the popcorn and stir, stir, stir to coat the kernels in the oil For about 1 minute. You may also add salt at this point. Put the lid on the instant pot and don’t disturb until you see the pot full of the corn. Be patient, this takes a few minutes and it’s hard to judge the set time. About 5 minutes and then it will slow down. shit off IP and remove the lid. Now add your melted butter and salt!
