Pumpkin cookies that are so moist & delicious you’ll never choose another recipe!
These are perfect for fall, I make them every year. This recipe makes a very large amount. It’s been handed down and unfortunately, I don’t have the exact amount. But I promise you’ll love them! The best part is these cookies are easily customizable. Originally the recipe is for pumpkin chocolate chip cookies, but they are also amazing just topped with some glaze or icing! Since the recipe makes so many, I break it into two batches because I love both. Half chocolate chip pumpkin the other half Glazed spiced pumpkin cookies! You chose how you want to enjoy them 😉.
Follow this easy recipe combining in order!
Preheat oven to 350
Grease cookie sheets
1 cup shortening
1 1/2 Cup white sugar
1 cup brown sugar
1 egg
1 tsp. Salt
1 1/2 Cup pumpkin
4 Cups flour
1 tsp. Baking powder
1 Tsp. Baking soda
2 Tsp. Vanilla
chocolate chips ( add to your preference) To split the batter like I do. Split into two equal parts Add 1 cup of chocolate chips to
1 part. For the other part add 1tsp cinnamon and 1/4 tsp. nutmeg Bake at 350 10-15 minutes
For a simple drizzle:
1 cup powdered sugar
1 1/2 tablespoons milk
1/2 teaspoon vanilla extract
