These are from my mom's kitchen, and they are so easy and delicious! I've also made a custom dip for them! 1. Zucchini, cut into chunks or shredded
2. 1 C. Pancake mix
3. 1/2 Cup milk, plus extra for consistency
4. 1 egg
5. 2Tbsp. Parmesan or more to your desire! 6. salt
7. garlic salt
8. oil for frying
Cut Zucchini Fritters into chunks, combine the pancake mix, Parmesan, milk, and egg. Stir till combined, adding just a tablespoon of extra milk at a time to desired thickness. Toss in zucchini chunks to coat.
Drop by about 3 Tbsp mounds into hot oil like you're making a pancake and cook for about 2-3 minutes per side, till the batter is golden, (they will finish cooking sitting)
Remove chunks to a plate covered in paper towels to drain and finish cooking. Season with salt and garlic salt
Optional dip. 1/2. Cup sour cream, 1/2 Tbsp. Of Mrs. Dash, 1/2 Tbsp. Lemon juice, mix together, and serve with fritters!
